I didn't need any pregnancy hormones to love this next recipe. It's one of my favorite
Polly's Coconut Pie
Ingredients:
1/2 cup self rising flour {if you don't have self rising flour - you can use this substitution - thanks Whitney!}
1 and 1/3 cups sugar
4 eggs beaten
2 cups milk
1/4 cup melted butter
1 teaspoon vanilla
{you'll also need about 1 and 1/2 cups of coconut - but won't add that till later}
Preheat oven to 375 F
Mix all of those ingredients together, and pour into a 9" pie dish
Then on top of your mooshy stuff in your pie dish, add about 1 and 1/2 cups of coconut (I usually just eye it)
Bake for 30-35 minutes. You'll have to experiment with the pie hot or cold to see how you like it. I prefer it cold.
