Recipe Week 2 .2

After the appetizer, you might want to serve a little salad. These are two salad recipes that I like to think I invented. They're super, super easy and delicious. And they'll make your guests think you're real fancy.

Spinach Strawberry Salad

Ingredients:
spinach leaves {the quantity depends on how many you're serving}
strawberries {washed and cut into little slices, I like lots of them}
sunflower seeds

Dressing: balsamic vinegar and a little olive oil

Mix and serve. SOOOO delicious. I made this salad for lunch all the time when I taught last year. Took but a few minutes to make, I'd add the dressing when I was ready for my lunch. It was always sooo tasty, and I never got tired of it.


Spinach Goat Cheese Salad

Ingredients:
spinach leaves {the quantity depends on how many you're serving}
goat cheese {not everyone likes goat cheese, but if you do, it's really yummy}
walnuts {either halves or pieces}

Dressing: Newman's Own Light Balsamic {I don't know if your mama ever told you, but not all balsamic vinaigrettes were created equal. I've tried other brands of balsamic's, and this one is hands down the best.} The salad just doesn't taste the same without it.
