next you should make...

Before I start sorting through the 249 photos I took this weekend, I'll end with one last recipe. Even if you're on a diet - you should probably hold off for one more day and make this tonight. I got this recipe from my friend, Polly, who is an excellent dessert maker.

Polly's Coconut Pie
{Again I don't have a photo - but again - you must make this dessert. I've made it at least 8 times and I've probably eaten about 6 of those by myself.}

Ingredients:
  • 1/2 cup self rising flour
  • 1 & 1/3 cup sugar
  • 4 beaten eggs
  • 2 cups milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla
  • 1 7 oz. coconut
-Preheat oven to 375 degrees

Directions:
  • Mix all the ingredients in a bowl (except for coconut)
  • Add ingredients to a 9 inch pie dish
  • add coconut on top
  • bake for 30-35 minutes

I think this might conclude recipe week. Hopefully you've found at least one new recipe to enjoy. If anything, it's made me realize that I need to stop making things that have sugar in them. :) I'm on a "meal" recipe hunt. Send me any good ones you might have by leaving a comment.

Hope you had a good weekend! I'll leave you with a little preview of photos to come:
Not only did he finish his 1/2 marathon, but he'll preach tomorrow. A running superhero, preacher-man to be. I'm glad he's mine.

  1. I have to try some of these recipes you're posting! What kind of recipes are you looking for? We do a lot of vegetarian if you are interested in that!

I know that Preacher-To-Be's-Wife-Glee, for sure. I am so thankful to be serving God alongside him as work through these years of school in preparation for ministry. I am praying for you guys :)

    Take care,
