Well, this is the easiest pancake mix; I guess it would be second to box mixes which are easy but do not taste like these.
Delicious Banana Pancakes
1 cup all-purpose flour
1 tablespoon white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
2 tablespoons vegetable oil
1-3 bananas (depending on how much you love them)
chopped pecans if you'd like to add some nuts
Preheat a lightly oiled griddle or pan over medium-high heat.
Combine flour, sugar, baking powder, baking soda and salt. Make a well in the center. In a separate bowl, beat together egg, milk and oil. Pour milk mixture into flour mixture. Beat until smooth.
Pour or scoop the batter onto the hot griddle, using approximately 1/4 cup for each pancake. This is when I cut slices of banana and put them on top of the pancake. I guess you could mix it with the recipe; I just though it's easier to add them on top.
